Elder Syrup II

In June I posted my Elder Syrup recipe for a syrup from elder flowers. Now in August I made Elder Syrup from elderberries. Here is the recipe:

Gather 2 to 3 kg of elderberries and extract the juice from them. I did this with a steam juicer. I got 1,5 liters of elder juice which I mixed with 25 g citric acid (from the drugstore) and 1,5 kg sugar. This time I cooked the syrup and filled it hot into bottles.

It's fine in sparkling water or hot tea and I love it in yogurt and muesli.

I love the coming autumn for the harvest time and all the delicious fruits we get now.
